Altai Creamery intends to launch the production of a famous Italian cheese Scamorza. Olga Voronkova, CEO of the enterprise, says that they are passing certification and obtaining permits.
There is no information on the output of this type of cheese yet. The creamery is in talks with potential buyers. Ms Voronkova says that customers from Moscow have already expressed their interest in Scamorza from Altai.
It is planned to make the cheese by a traditional Italian technique, using manual labor. Scamorza is produced from cow milk in the form of small pear-shaped heads, hung on the ropes for drying. Because of this the cheese is often referred to in Italy as ‘strangled’.
As we have informed, this year Altai Creamery has resumed operations after several years of inactivity. In addition to the Italian cheese, the company plans to release processed cheeses, as well as the creamery’s traditional hard cheeses — Swiss, Soviet, and Altai.
